Here's the recipe for our organic and plant-based Brunkager:


Ingredients:

  • 2 cups organic flour

  • 1 tsp baking powder

  • 1/2 cup plant-based butter

  • 1/2 cup organic brown sugar

  • 1/4 cup maple syrup

  • 1 tbsp ground flaxseeds mixed with 3 tbsp water (as an egg substitute)

  • 1 tsp organic cinnamon

  • 1/2 tsp organic ginger

  • 1/4 tsp organic cloves

  • A pinch of salt

Instructions:

  1. In a bowl, cream together plant-based butter and brown sugar.

  2. Add the flaxseed mixture and maple syrup, mixing well.

  3. In a separate bowl, whisk together flour, baking powder, spices, and salt.

  4. Gradually add the dry ingredients to the wet ingredients, forming a dough.

  5. Roll the dough into a log and refrigerate for at least 1 hour.
